Note de dégustation :
A very smooth, clean, and perfectly balanced specialty decaf.
To create this decaf, Hogar Café selected cherries from small-scale producers in the Risaralda region of Colombia. The harvest was processed using the washed method, following a fermentation protocol unique to the farm. The caffeine is then removed from the bean using the ethyl acetate (EA) method derived from sugar cane.
How is it decaffeinated?
- The beans are treated with hot steam to remove the silver skin.
- They are then submerged in ethyl acetate, a natural solvent derived from sugar cane, which removes up to 99.9% of the caffeine while preserving the coffee's precious aromatic characteristics.
- Residual ethyl acetate is removed with hot steam, then the coffee is sent to drying units to stabilize its flavor and moisture content.
This method is considered environmentally friendly and safe for both humans and nature.
